What’s new in School Catering?

As announced by the French health Minister last September, a new commitment plan giving specific nutritional standards for school catering has been officialised in May.

The basis of this regulation is the GEMRCN (Groupe d’Etudes de Marché de la Restauration Collective et Nutrition), a public agency supervising collective catering companies regarding nutrition. This new agency replaces the GPEMDA (Groupe Permanent d’Etude de Marché de Denrées Alimentaires) and has more distinctive missions: guides, recommendations, clauses and technical specifications…

The new standards mainly affect 4 areas:
- Nutritional needs: mainly lipids, fibers, vitamins, iron and calcium
- Pattern for the meals: breakfast, main meals and snacks.
- Menus elaboration: frequency in serving the meals, size of the servings
- Traceability of food balance: control of the menus, frequencies and products.

Even if, up to date, public authorities have still not defined the precise content of this plan, we know that it will set new standards that all the school catering professionals (ingredients suppliers and services providers) will now have to comply to.
